Baked feta and tomato bake

Ingredients:

1 block of feta cheese (make sure it is locally produced)
1 tablespoon honey
drizzle of olive oil
2 cups cherry tomatoes, halved
1/3 cup Kalamata olives, halved
1/3 cup red onion, thinly sliced 
2 tablespoons olive oil
1 clove garlic, minced
1 teaspoon dried oregano
salt and ground black pepper to taste
chopped fresh basil for garnish (optional)

Method:

  1. Preheat oven to 200°C.
  2. Place the feta cheese in the centre of a baking dish, spread with honey and drizzle with olive oil.
  3. In a small bowl, combine tomatoes, olives, red onion, olive oil, and garlic. Sprinkle with oregano, season with salt and pepper, and toss. Spoon the tomato mixture around the feta cheese.
  4. Bake until cheese is soft and tomato mixture is bubbly, 20 to 30 minutes. If you want more colour, place under the oven grill for a few minutes.
  5. Garnish with fresh basil and serve warm. Pairs well with cooked rice, pasta or flatbread
