Baked feta and tomato bake
Ingredients:
1 block of feta cheese (make sure it is locally produced)
1 tablespoon honey
drizzle of olive oil
2 cups cherry tomatoes, halved
1/3 cup Kalamata olives, halved
1/3 cup red onion, thinly sliced
2 tablespoons olive oil
1 clove garlic, minced
1 teaspoon dried oregano
salt and ground black pepper to taste
chopped fresh basil for garnish (optional)
Method:
- Preheat oven to 200°C.
- Place the feta cheese in the centre of a baking dish, spread with honey and drizzle with olive oil.
- In a small bowl, combine tomatoes, olives, red onion, olive oil, and garlic. Sprinkle with oregano, season with salt and pepper, and toss. Spoon the tomato mixture around the feta cheese.
- Bake until cheese is soft and tomato mixture is bubbly, 20 to 30 minutes. If you want more colour, place under the oven grill for a few minutes.
- Garnish with fresh basil and serve warm. Pairs well with cooked rice, pasta or flatbread
