Caramel Peppermint Crisp Tart

Ingredients:

  • 1 slab of peppermint crisp chocolate bar
  • 1 tin of caramel
  • 1 1/2 cups of whipping cream
  • 1 pack of tennis biscuits

Method:

  1. Finely crush the peppermint chocolate bar.  
  2. In a mixing bowl, add the caramel and whisk until completely smooth. 
  3. Fold the whipped cream into the caramel until just combined. 
  4. In a serving dish, add one layer of biscuits and then half of the cream mixture. Then evenly spread half the peppermint chocolate over the cream mixture. 
  5. Repeat with another layer of biscuits and then the remaining cream.  
  6. Finish off with the remaining chocolate and place into the fridge to set for 30 minutes – 1 hour before serving. Overnight is best.
