Chocolate fondant potjie

Ingredients:

For the Batter:

  • 1 egg
  • 45ml butter (melted)
  • 125ml milk
  • 5ml vanilla essence
  • 125g self-raising flour
  • 15ml cocoa powder
  • Pinch of salt
  • 100g sugar
  • 160g dark chocolate (2 small slabs, broken into blocks)

For the Sauce:

  • 250g brown sugar
  • 30ml cocoa powder
  • 375ml boiling water

To Serve:

  • Fresh cream or ice cream

Method:

  1. In a no. 10 flat-bottomed potjie, whisk the egg, then add the melted butter, milk, and vanilla essence. Mix everything together using a wooden spoon.
  2. Add the self-raising flour, cocoa powder, salt, sugar, and chopped chocolate into the wet mixture. Stir thoroughly until well combined.
  3. In a separate bowl, mix the brown sugar, cocoa powder, and boiling water until smooth and the sugar dissolves.
  4. Pour the hot cocoa-sugar-water sauce over the batter in the potjie. Cover the potjie with the lid, place coals under and on top of the pot, and bake for 25 minutes, until the top is firm to the touch.
  5. Serve warm with fresh cream or ice cream.
