Spinach and feta muffins
Ingredients:
Dry Ingredients:
310g flour
5g baking powder
2.5g salt
Wet Ingredients:
330ml milk
110g butter
1 egg
Filling:
200g spinach (cooked)
100g feta (cubed)
80g sundried tomatoes (Sliced)
60g parmesan cheese
Method:
1. Preheat the oven to 180°C and line a 12 cup muffin pan with liners
2. Mix the dry ingredients in a bowl.
3. Add feta and sundried tomatoes into the bowl along with half the parmesan cheese and spinach. Fold the ingredients until evenly combined.
4. In another bowl, whisk together the wet ingredients until combined, then add to the dry ingredients. Fold together and do not over-mix.
5. Add your mixture to the 12 muffin cups. Top off with remaining parmesan cheese.
6. Bake for 20-25 minutes or until golden. Transfer to a wire rack to cool completely.
