Cheesy scones
Ingredients:
2 ½ cups flour
4 tsp baking powder
1 tbsp sugar
¼ tsp salt
1/3 cup cold butter, cut into pieces
1 ¼ cup cheddar
2 eggs, beaten
¾ cup heavy cream
Milk, to brush top of scone
Method:
1. In a bowl, use your fingers to mix together the butter with the dry ingredients until the mixture resembles coarse bread crumbs, then add cheese and stir to combine.
2. In a separate bowl, mix together eggs and heavy cream, then pour into the flour mixture and stir until a dough forms.
3. Gently knead dough on a lightly floured surface until smooth, then cut into thick wedges or circles using a cookie cutter.
4. Place onto a greased baking pan and brush with milk, then bake at 200°C for 20 minutes or until golden.
