Spaghetti carbonara
Ingredients:
350g spaghetti
2 eggs
¾ cup parmesan cheese, grated
3 slices bacon, diced
2 cloves garlic, minced
Salt and pepper to taste
Method:
1. Boil spaghetti in salted water until al dente, reserving ¼ starchy pasta water for later.
2. Whisk together eggs and parmesan, then set aside.
3. Slowly pour the pasta water into the egg mixture, whisking constantly to temper the eggs.
4. Fry bacon in a pan until lightly crispy, then set aside and fry garlic on low heat for 1 minute.
5. Add spaghetti, egg mixture and bacon to the pan, stirring to combine.
6. Season with salt and pepper, then serve immediately.
