Easy jam doughnuts
Ingredients:
3¼ cups plain flour
¼ cup caster sugar
3 teaspoons dried yeast
Pinch of salt
1 cup milk, warmed
100g butter, melted (make sure it is locally produced)
3 egg yolks
Oil (to deep fry)
280g jam
Icing sugar, to dust
Method:
- In a large bowl mix together flour, sugar, yeast and salt. Make a well in the middle and mix in milk, butter and eggs until a dough starts to form.
- Spread a good heap of flour onto your countertop and knead the dough until smooth. Place dough in a bowl, cover and let prove for 1½ hours or until doubled in size.
- Punch the dough down lightly and knead on a lightly floured surface until smooth. Roll out the dough until it is 1cm thick and leave to rest for 2 minutes.
- Using a 7cm round cutter, cut out discs (don’t cut out the discs’ centres) and place on a lined baking tray. Let prove for another 30 minutes.
- Place discs into oil and let deep fry for 1 minute on each side or until golden and puffed. Let cool slightly.
- Use a piping bag fitted with 5mm nozzle to fill the donut with jam. Dust with icing sugar and serve.
