Bran and banana muffins

Ingredients:

2 large eggs
2/3 cup brown sugar
1 cup ripe bananas, mashed
1 cup buttermilk
1 cup unprocessed wheat bran
¼ cup canola oil
1 tsp vanilla extract
1 cup whole-wheat flour
¾ cup all-purpose flour
1 ½ tsp baking powder
½ tsp Bicarbonate of soda
½ tsp ground cinnamon
¼ tsp salt

Method:

  1. Preheat oven to 200°C and grease a 12-cup muffin pan with cooking spray or line with muffin cases.
  2. In a medium bowl, whisk together the eggs and brown sugar until smooth. Add mashed bananas, buttermilk, wheat bran, oil, and vanilla extract. Continue whisking until well combined.
  3. In a separate large bowl, whisk together the whole-wheat flour, all-purpose flour, baking powder, Bicarbonate of soda, cinnamon, and salt.
  4. Create a well in the centre of the dry ingredients, then pour the wet ingredients into the centre. Gently stir the mixture until just combined, being careful not to overmix.
  5. Scoop the batter into the muffin pan, filling each cup almost to the top, then place in the oven and bake for 15 to 25 minutes, or until golden brown.
  6. Allow to cool in the pan for 5 minutes. Transfer to a wire rack to cool slightly before serving. Enjoy!
