Bran and banana muffins

Ingredients:
2 large eggs
2/3 cup brown sugar
1 cup ripe bananas, mashed
1 cup buttermilk
1 cup unprocessed wheat bran
¼ cup canola oil
1 tsp vanilla extract
1 cup whole-wheat flour
¾ cup all-purpose flour
1 ½ tsp baking powder
½ tsp Bicarbonate of soda
½ tsp ground cinnamon
¼ tsp salt
Method:
- Preheat oven to 200°C and grease a 12-cup muffin pan with cooking spray or line with muffin cases.
- In a medium bowl, whisk together the eggs and brown sugar until smooth. Add mashed bananas, buttermilk, wheat bran, oil, and vanilla extract. Continue whisking until well combined.
- In a separate large bowl, whisk together the whole-wheat flour, all-purpose flour, baking powder, Bicarbonate of soda, cinnamon, and salt.
- Create a well in the centre of the dry ingredients, then pour the wet ingredients into the centre. Gently stir the mixture until just combined, being careful not to overmix.
- Scoop the batter into the muffin pan, filling each cup almost to the top, then place in the oven and bake for 15 to 25 minutes, or until golden brown.
- Allow to cool in the pan for 5 minutes. Transfer to a wire rack to cool slightly before serving. Enjoy!
