Veg couscous bowl
Ingredients:
1 red pepper, cut into chunks
1 red onion, peeled and cut into chunks
100g cherry tomatoes
2 Tbsp Robertsons Braai & Grill All-in-One
1 Tbsp Robertsons paprika
3 Tbsp sunflower oil
1 cup dry couscous
2 Tbsp balsamic vinegar
2 tsp Knorrox All-in-One
1½ cups boiling water
100g feta cheese, crumbled
handful fresh mint and basil, finely chopped
Method:
- Preheat the oven to 200 °C, on grill setting.
- Place the peppers, onions and tomatoes in a roasting pan. Sprinkle with Robertsons Braai & Grill All-in-One and Robertsons Paprika, then drizzle over the oil and balsamic vinegar. Toss the vegetables to coat them evenly and place in the oven for 20 minutes.
- Meanwhile, mix together the couscous and Knorrox All-in-One in a medium-large bowl. Add the boiling water, stir until the water is evenly distributed, and cover the bowl with clingfilm to retain the heat. Set aside for 10 minutes for the couscous to soften and absorb the water.
- Fluff the couscous, using a fork, to break up any clumps. Add the roasted vegetables, crumbled feta, mint and basil.
- Mix well and serve.
