Dill and lemon baked salmon

Ingredients:

4 x 200g skinless salmon fillets
1 cup full cream milk
1 tablespoon butter
2 tablespoons plain flour
1/4 teaspoon ground nutmeg (optional)
1/2 cup grated mozzarella cheese
Salt and white pepper, to taste
1 tablespoon wholegrain mustard
1 tablespoon freshly chopped dill
1 teaspoon finely grated lemon rind

Method:

  1. Preheat oven 180°C
  2. Arrange salmon fillets on a baking dish lined with baking paper
  3. Make the sauce – place milk, spread, flour and nutmeg (if using) into a saucepan and bring to the boil over medium heat whisking constantly until thick and smooth.
  4. Add mustard, dill, lemon rind and season to taste.
