Butternut & feta quiche

Base Ingredients:

150g butter
1½ cups flour (cake or gluten-free option)
1 cup grated cheese

Base Method:

  1. Preheat oven to 180°C.
  2. Melt butter (either in microwave or on stove top), then add cheese and flour.
  3. Mix well.
  4. Press into large pie/ quiche dish and bake at 180°C for 10 mins .
  5. Once done, set aside.

Filling Ingredients:

Olive oil
1 x onion
2 x cloves of garlic
2 x cups roasted butternut
Bacon (optional)
2 tablespoon chopped parsley
½ cup milk
1 cup cream
2 x rounds feta, broken up
½ teaspoon salt
2 cups grated cheese
3 eggs
Ground pepper

Base Method:

  1. While the base is cooking, chop onions and garlic (and bacon if using).
  2. Fry until onions are translucent in a little olive oil over a medium heat, set aside.
  3. In a separate bowl, mix milk, cream, eggs, parsley salt and pepper well.
  4. Into quiche dish (with cooked base), add in onion mixture, then roasted butternut, cheese and then feta.
  5. Lastly pour over egg mixture.
  6. Grind over some ground pepper.
  7. Bake in 180 degree oven for 35 minutes.
